Frequently asked
What is Kaluga Hybrid caviar?
Kaluga Hybrid is a farmed cross of Kaluga (Huso dauricus) and Amur sturgeon (Acipenser schrenckii), known for large, buttery, clean-tasting pearls. Because it shares parents with two other species, the same roe can be described a few different ways.
Why do caviar names overlap?
Some sturgeon are crossbred. A Kaluga Hybrid carries genes from both Huso dauricus and Acipenser schrenckii, so all three names can point at related roe. The map on this page shows exactly which tin is which.
